1. Prepare chicken:
▪️ Wash chicken with diluted salt water and ginger to remove odor. Drain.
▪️ Apply turmeric powder (or fresh crushed turmeric) to chicken skin to create a beautiful yellow color.
2. Prepare ingredients:
▪️ Cut lemongrass into pieces, crush.
▪️ Slice ginger thinly.
▪️ Wash lemongrass leaves, keep one part to line and one part to stuff into chicken belly.
3. Marinate the chicken:
▪️ Rub the salted chicken seasoning packet evenly over the chicken, both inside and out.
▪️ Let the chicken marinate for about 30 minutes - 1 hour to absorb the spices.
4. Prepare the pot:
▪️ Spread a layer of coarse salt about 1-2cm thick on the bottom of the pot.
▪️ Place banana leaves or foil on top of the salt.
▪️ Arrange lemongrass, ginger and kaffir lime leaves to create aroma.
5. Marinate the chicken:
▪️ Place the chicken on top of the lemongrass and ginger.
▪️ Cover the chicken with banana leaves or foil, then cover the pot.
▪️ Turn on low heat, marinate the chicken for about 45-60 minutes, depending on the size of the chicken.
6. Finish:
▪️ When the chicken is cooked, take it out and cut into bite-sized pieces.
▪️ Garnish with shredded kaffir lime leaves and dip in salt, chili and lime.
